California’s Redwood Coast on the north coast of California, near the Oregon border, is where Sequoias grow, not sugarcane, but rum is made here.

Humboldt Distillery

Humboldt Distillery, founded in 2012, distills organic rum in Humboldt County on the Redwood Coast of California. Rum is made from sustainably sourced sugar cane and quadruple distilled. Humboldt Organic Spiced Rum, their first rum to hit the market, is distilled from organic American sugarcane and infused with a secret blend of whole organic spices. Humboldt Organic Gold Rum is distilled from organic sugarcane and aged in American white oak barrels. Humboldt Organic Dark Rum is a new release that is a flavourful and full-bodied spirit distilled from organic molasses and aged up to 8 years in once-used bourbon barrels. Coming soon is Humboldt Organic Silver Rum, worth checking out. Visit the distillery in Fortuna for a tasting; it’s Open Monday – Thursday, 10am-5pm.

In Fort Bragg, just north of Mendocino in the heart of Noyo Harbor is this micro-distillery formerly known as the Noyo Ice House. Opened by the Schnaubelt family in 2018, they make a variety of spirits, including rum. Schnaubelt White Rum and Aged Rum Barrel are aged in toasted cherry wood. Down the hill in Noyo Harbor, they have a Tasting Room open Fri-Sun, Noon to at least 5pm, and offer pre-booked private tours and tastings.

Charbay Distillery

In 1983, Charbay opened in Ukiah, Northern California. A trailblazer in American craft distilling, now in their 13th generation, is led by Master Distiller Marko Karakasevic. They first made brandy, then vodka and whiskey, and now make rum. The name comes from an adaptation of their family name, which has roots in the former Yugoslavia. Charbay Double Aged Rum is 137 proof full cask strength, made using sugarcane syrup from Maui, vacuum extracted for extra purity. Distilled twice through a direct-fired Alambic Charentais pot still in Cognac, France, and is matured for 5 years in stainless steel (while a clear rum), then a further 3 years in used French oak.

Founded in 2019, Midtown Spirits is the first distillery in Sacramento since Prohibition. Located in the heart of Midtown at 19th and Q, founders Dave Abrahamsen and Jason Poole were inspired to “complete the cocktail” while running local bars. After nearly two years of development, they launched the first rum release in Sacramento’s history. Today, the distillery produces craft-distilled rum, whiskey, vodka, gin, and coffee liqueur. Visitors can enjoy cocktails and a meal in the restaurant, which overlooks a 400-gallon hybrid still.

Patio29 Spirits Co.

Founded in 2016, Patio29 Spirits Co. is a small-batch artisan distillery located in Winters, California, within the agricultural heart of Yolo County. The name is inspired by the family backyard, where the idea came to life. Twin Mischief Aged Rum is their core range of spirits, including Yolo Brothers Straight Bourbon Whiskey, Yolo County Craft Vodka, and Yolo County Craft Gin. Made from a distillate of 50% dark molasses and 50% raw cane sugar that is aged 50% in new oak barrels and 50% in barrels previously holding bourbon. The rum is designed to appeal to bourbon lovers as well as those who appreciate a fine aged rum. You can visit the distillery tasting room to explore spirit flights and a pub-style food menu.

Regions like Napa Valley and Sonoma County benefit from a unique geography where Pacific climate clouds roll in, acting as a cooling blanket that significantly influences the terroir, creating ideal grape-growing conditions across areas from Calistoga to the Russian River Valley. But, among the vineyards, craft distilling takes place, and that means there’s rum to be found.

Lightning Spirits

In Petaluma, Sonoma County Lightning Spirits, since 2020, is a spirits producer. They make Aquila Platinum Rum using local California alpine spring water. The Rum is filtered with carbon-rich stones like the ancient aquifer that naturally filters its local water. The brand constellation represents the eagle of the god Jupiter in Roman mythology. It was first catalogued by the Greek astronomer Ptolemy in the 2nd century. The rum is available locally in stores and bars.

The Bay Area

San Francisco Bay has the cities of San Francisco, San Jose, and Oakland. It is a drowned river valley paralleling the coastline. The city and port are on a peninsula between the Pacific Ocean and San Francisco Bay. St George Spirits was an early pioneer craft distiller that once made rum, but rum is made elsewhere now.

Sgt. Classick Hawaiian Rum is a product of Essential Spirits Alambic Distilleries, a family-owned micro-distillery founded by Vietnam War veteran R. David Classick and his wife Andrea. A service-disabled veteran-owned business enterprise (SDVOBE), the brand pays homage to David’s military service and incorporates their love for Hawaii into its spirit. Produced in California using 100% Hawaiian molasses, Sgt. Classick Rum reflects the family’s journey from military service to rum distiller. Along with their Master Distiller, Dave Sr and son Dave Jr. have been inspired to create a distilling family dynasty. Sgt. Classick Rum is a limited-edition rum, as the Hawaiian molasses source is no longer available. Making every bottle, case, and barrel a unique piece of distilling history. The last remaining stock is either aged for 6 years or 7 years old, maturing in ex-Jack Daniels barrels. A working distillery, it’s not generally open to the public, but occasionally they offer tours and tastings for groups of 5 or more. Contact them directly.

Tripp Distillery

A small batch distillery located in the coastal town of Pacifica, just south of San Francisco. Started as a home-brewing turned home-distilling project 15 years ago. Tripp Distillery was born in 2016 and was created by head distiller Jason Tripp. Pacifica rum uses organic ingredients and is distilled in a copper 220-gallon still, running about half the speed of traditional pot stills. The rum is matured in oak barrels. The seaside location has cool coastal air with temperature and humidity profiles comparable to Scotland, for barrel maturation. Tripp Distillery closed in late 2025.

Treecraft Distillery

Located on Treasure Island in the middle of San Francisco Bay, in the former Naval Firehouse. Treecraft Distillery was founded in 2015 by Gordon and Nate. The rum was distilled from a molasses and white cane sugar wash, fermented with a whiskey yeast. This produces a unique congener profile not common elsewhere. The tasting room was directly in front of the 500-gallon custom copper pot still. Treecraft Distillery closed in early 2026.

Wright & Brown Distilling Co.

Founded in 2014, Wright & Brown was the first distillery in Oakland since before Prohibition. Focussed on whiskey and rum, they first released rum in 2017. White rum and Aged Rum are made with 100% Grade-A Georgian Black Strap molasses and then distilled in a 250gal Vendome Copper Pot Still (the same still they use to make their whiskies). Fresh off the still, the rum is fruity and floral with a little funk on the back end. After ageing for 2 years in ex-bourbon barrels – used 30L ex-bourbon American oak barrels, No.3 charred new American oak barrels, and new French oak. They don’t offer tastings just now, but do sell bottles at their distillery shop. If stopping by Oakland, they’ll give you a quick peek inside the distillery and are in the process of building a tasting room that will allow them to offer tastings and cocktails on site. The Sierra Nevada is a towering mountain range in eastern California, characterised by soaring peaks, deep valleys, alpine lakes, and a dramatic climate that transitions from lush, alpine forests to arid desert.

Shedcat Distillery & Kitchen

Shedcat, founded in 2019 in South Lake Tahoe, made a range of spirits in-house and began as a home-distilling project. Co-owner Jonathan Stein created their own still, a modular continuous column reflux setup, allowing for multiple distilling levels. They produced 9 Tails White Rum made with 100% organic and non-sulfured blackstrap molasses, triple distilled. Tahoe Tessie Spiced Rum used organic spices, botanicals and sugar. They used Lake Tahoe water. Shedcat Distillery & Kitchen closed in 2025. Nearby is The Beach Tiki Bar, and Lake Tahoe Tiki Boat, a popular spot for rum drinks, DJs, and events with a beach bar feel in South Lake Tahoe.

Shelter Distilling

Founded by Matthew Hammer and Jason Semon, Shelter Distilling is a distillery, brewery, and restaurant in Mammoth Lakes that opened in 2017. They make a wide range of spirits, including Stormrider Rum. Distilled from molasses and fermented with a Belgian yeast. Aged Stormrider Rum is distilled from cane sugar and fermented with Belgian yeast, then aged for 14 months in a High Sierra Whiskey Barrel. Spiced Stormrider Rum is a limited edition for the holiday season, heavily spiced with cinnamon, vanilla beans, coconut chips, nutmeg, and fresh orange peel. Situated at the base of the Mammoth Mountain Ski Area, it’s open 7 days a week, and you can taste their rum whether après ski or on a summer hike. In 2024, they opened a new location in the Colorado Outdoors campus.

Owens Valley Distilling Co

Owens Valley Distilling Co.

Owners Brittany and Dave Holman started the distillery in 2018, making artisanal spirits in the beautiful Owens Valley of Bishop in Inyo County. Part of the Eastern Sierra Spirits & Ale Trail, which was created in 2023. The range includes Argentum Rum, a silver rum made from molasses, cane sugar and baker’s yeast. Quintuple Rum is inspired by Belgian ales and named according to their strength: Single, Double, Triple, and Quad being the strongest. Going one step further, Quintuple is made from pure molasses fermented with Belgian ale yeast. Quintuple Cuvée Single-Barrel Rum is their finest rum, matured in charred American oak barrels. They are open for bottle sales, craft cocktails & evening rotational food vendors on Thursdays to Saturdays 12-8pm.
