Australia, The Land Down Under is the only country in the world that covers an entire continent. From arid deserts to tropical rainforests, rum’s history is deeply intertwined with its colonial past in the southeast. The British Navy brought rum rations from Bengal and Jamaica in 1788, leading to the infamous “Rum Rebellion” in 1808, a protest against a crackdown on illicit rum trade. Despite this, sugar production flourished, with the oldest distillery established in Queensland in 1884. Today, it stands alongside with the craft rum scene driving the spirit’s modern resurgence. Over a third of Australian craft distilleries produce rum, with most use pot stills or column stills and molasses, although some are making cane juice rum. New South Wales is the epicentre.
