Rum Guide to Maryland

Rum in the Old Line State

Maryland is a state steeped in history with a rich connection to the rum trade. From its vital role in the nation’s founding to its bustling port of Baltimore, where rum flowed freely, Maryland has long been a key player in the spirits industry. Indeed, during colonial times, the state was a leader in American spirit production.

Known as both the “Old Line State” for its Revolutionary War loyalty and the “Free State” for its defiance during Prohibition. Maryland’s geography often has it referred to; as America in Miniature. The state has a variety of landscapes from the rolling Appalachian foothills and Piedmont Plateau to the expansive Atlantic Coastal Plain and the Chesapeake Bay—the nation’s largest estuary.  With water nearly everywhere, Maryland’s natural resources have played a significant role in shaping its history and its spirit traditions.

Rum’s story in Maryland begins with the arrival of sugarcane in the 1700s.  Colonists, deeply involved in the Triangle Trade, including enslaved people, established rum distilleries, with at least five operating in the state during that century. However, as molasses supplies were disrupted by the British, Maryland’s distilling focus shifted towards rye and whiskey production.

Even before the Civil War, Maryland’s independent streak was evident, earning it the nickname Free State due to the illegality of slavery within its borders. This rebellious spirit continued into the Prohibition era, when Maryland stood alone in refusing enforcement, transforming Baltimore into a haven for rum runners. Before Prohibition, Maryland had been a Top 5 alcohol producer in the nation, a distilling heritage recognised by modern distillers today.

While rum’s prominence waned for a time, the spirit has seen a resurgence in recent years. Since 2008, new distilleries have been opening across the state. The modern revival of Maryland’s rum scene, however, can be traced to 2012, when a new distillery launched, sparking a wave of renewed interest in American rum.

This guide explores Maryland’s vibrant craft rum scene, from the mountains of Western Maryland to the shores of the Eastern Shore and the historic landscapes of Southern Maryland.

Tenth Ward Distilling Co

In downtown Frederick, Tenth Ward founded in 2016, makes a seasonal Summer Rum for their Bottle Club Release. This rum is distilled from molasses and infused with black pepper, coconut, almond and apricot. They source organic sugar cane molasses grown in the US. Then in the mash tun, they heat the molasses with water up to the temperature needed to ferment. Once the yeast is added and ferments for about a week, it’s then distilled in a 2,000 L pot still called Mama Bear. After distillation, the spirit is infused in a maceration method. The rum is slightly back-sweetened and brought down to proof before bottling. Try it locally when available in their tasting room.

Founded in 2020, Puerto Rico Distillery brings the Rivera family’s rich Puerto Rican heritage and passion for rum to Frederick, MD.  Growing up, rum, especially “pitorro,” was at the heart of their celebrations and traditions. Covalent Spirits

Covalent Spirits

Opened in November 2022, Covalent Spirits has revived craft distilling in Westminster.  Founders Jenn and Drew’s dream is now a reality, bringing premium rum to the heart of the city. Their rums distilled in Carroll County, begin with blackstrap molasses and brown sugar, then are aged in new charred oak barrels—a process similar to bourbon whiskey. This unique ageing imparts a complexity that makes their aged rum a delight neat, on the rocks, or in a cocktail, with flavour notes that will appeal to bourbon lovers.  After five years in the barrel, it develops even greater depth and pairs well with a cigar.

Launched in August 2024, Covalent Spirits Spiced rum uses its aged rum as its base, infused with warm baking spices, vanilla, ginger, and a touch of molasses sweetness. This versatile spirit is perfect for cocktails year-round. Visit their tasting room on Main Street in downtown Westminster for live music, special events, delicious cocktails, and their annual National Rum Day celebration each August.
