Haiti is the western half of Hispaniola, the first place in the Americas sugarcane was planted in 1493. Mountains rise from lush valleys, creating a perfect environment for sugarcane cultivation but also prone to earthquakes. Haiti producing fresh cane juice rum with French traditional methods. The main distillery is one of Haiti’s oldest companies and the country’s most famous export. However, Haiti also has over 500 small producers making Clairin, a cane juice spirit distilled on homemade stills. Until recent times, Clairin remained a local secret, and in 2012, these expressions were exported. They give a glimpse into how rum used to be made. Haiti’s spirit of Clairin lets us enjoy their terroir from afar.
