The Republic of Ireland or The Emerald Isle is known for its temperate climate and rolling green hills. Whiskey reigns supreme, but rum is made here. Following distillery closures during US Prohibition, a few craft producers are reviving the spirit. These rums often source molasses from the Tropics, with some undergoing secondary continental ageing. A touch of Irish innovation is evident in the emergence of botanical rums and whiskey casks.
