The Philippines, “Pearl of the Orient,” is a Southeast Asian archipelago with over 7000 islands, known for its dramatic volcanic landscapes. Mount Kanlaon’s fertile soil nourishes heirloom sugarcane varieties, a key ingredient in Filipino rum. The country boasts a long history of distillation, influenced by both Chinese and Spanish colonisers. Filipino rum is typically column-distilled from molasses, charcoal-filtered for a smooth taste, and undergoes linear ageing. In 2012, a new distillery emerged in Negros Occidental, the country’s sugar capital. Today, a testament to the quality of Filipino rum, one brand even holds the title of No. 1 in the world.
