New Zealand, “The Land of the Long White Cloud” has a dramatic landscape with geothermal wonders on the volcanic North Island and the Southern Alps on the South Island. Sugarcane cultivation had a brief moment in 1883 at Chelsea Bay, using imported cane from Australia and Fiji, but it wasn’t a lasting venture. Rum, however, has found a new foothold. Building on a history of rum rations for the British Navy, craft distilleries have emerged in recent years on both the North and South Islands, specialising in molasses-based rums.
