Fiji, the Jewel of the Pacific, is an archipelago of over 300 volcanic islands and has a tropical climate. British colonial rule from 1874 to 1970 influenced the establishment of a sugar mill in Lautoka on the main island in 1903. This laid the groundwork for rum production, which began in 1980. Fijian rum uses pot and column stills, local hand-cut sugarcane molasses, and coconut charcoal filtration, resulting in distinctive rum profile rich in esters.
