Cuba is a pioneer in the world of rum. Often referred to in Spanish as “El Cocodrilo,” from above the main island looks like a crocodile or alligator. Spanish settlers first planted sugarcane in 1523, its roots thriving in the island’s fertile red soil in the Valley of the Sugar Mills. Spanish settlers pioneered column distilling, charcoal filtering and a focus on short fermentation for lighter rums. Cuba’s rum golden age of the 1920s was the birthplace of legendary bartenders and cocktails like the Daiquiri and Mojito. In the 1960 revolution, the government seize all distilleries, prompting iconic brand Bacardi to move. Cuba is the first rum awarded UNESCO cultural heritage status. Led by revered “Maestros Roneros” (rum masters), and Cuba remains the spiritual home of “Latin” rum.
