Suriname, a land straddling the equator on the northern tip of South America, has a more recent rum tradition. Lush rainforests and mighty rivers dominate the landscape, a stark contrast to the sugarcane estates established by the Dutch in the 1880s (Suriname gained independence in 1957). Rum production began in 1966, and today flourishes in this hot, tropical climate. Borgoe, the country’s main rum producer, uses a combination of three column stills for efficiency and a John Dore pot still for a touch of tradition. The rums aged in ex-bourbon barrels, are part of the Authentic Caribbean Rum (ACR) standard.
